Another aspect (complementary to your observations) is that Apple is
refreshing it's designs, introducing new effects that will draw
attention whilst allowing old stuff to fade away. The glossy blobs
"period" is coming to a close, and new "pieces" are making their
debut (all according to how Apple can thoughtfully make use of new
technology).
Cover view is the new "showcase" piece in iTunes 7, so there's no
need for old stuff to compete for attention. It would all get too
busy, and too much like f.*g windows. [1]
And I do think you're right--the flatness will work better visually
with new animated effects.

[1] The categories of the side bar may be replaced with lower case
text eventually. They're LOUD to draw attention to their introduction?
